Soy in not really a part of the Standard American Diet (SAD). You know meat and potatoes are just not made of soy. Tofu and tempeh seem like odd concoctions to many Americans and really they are odd, even though if you learn how to use them you really can make some delicious and nutritious foods!
But lately there are so many ways you can get your soy from soyburgers to soynuts, tofu to soymilk, there are hundreds of ways to partake.
So I am going to share my favorite way to eat soy. Edamame. That is pronounced “ed-a-mommy”. Edamame is a specialty soybean that is harvested as a green vegetable. It comes in a pod, similar to peas. You take the seeds out of the pod and eat them in salads, soups, casseroles, stir-frys, just for a snack, whatever! It is really, really good!
Edamame is rich in soy protien and highly nutritious and unlike tofu and tempeh (which can be wonderful sources of soy-but do require a learning curve!) there is nothing weird about edamame and there is no learning curve. And…the good news is —-The Food and Drug Administration states that: “25 grams of soy protein a day as part of a diet low in saturated fat and cholesterol may reduce the risk of heart disease”. So its good for you too. Check the freezer section of your favorite health food store or supermarket. Enjoy your Soy!
